Silken tofu, raw, mixed up with liquid smoke is an excellent ingredient for protein content for salads and other things too. Preparing is super easy, just smush the tofu into rough pieces in a bowl or such, throw few drops of liquid smoke in and swirl until mixed. To get a spicy silken tofu you can leave it sit with fresh chilis, chili crisp, chili oil or similar concoction (in addition to liquid smoke). Note that liquid smoke is not only smokey flavour but it also give a bit of umami taste, so it gives your brain the signal that this is a protein rich food.
For the salad part, it works with whichever salad is cheaply available, usually carrots and bok choi or chinese leaves (“Napa cabbage”) but also like radishes go well. Roughly chop the salad ingredients in other bowl and throw in the vinegar (vinegar is both useful for the flavour but also keeps most veg from turning black and mushy if this is prep for large weekly batch of food). Like tofu, the salad can also be soaked together with fresh chilis, chili oils and sauces for flavour. Prep time is 2 minutes plus whatever the vegetable takes, bok choi is a minute but like carrots and radishes can take more. Soakage time is at least half an hour but usually you can take it over night.
